Creamy Potato Bake


Although the recipe calls for instant potatoes, I always use 'real' potatoes. It works either way!

Prepare 6 servings instant mashed potatoes using package directions EXCEPT omit butter. Add one 4-ounce carton whipped cream cheese; beat well. Stir in 1 beaten egg, 2 tablespoons finely chopped green onion, and 1 tablespoon finely snipped parsley; blend well. Transfer to a well-greased 1-quart baking dish. Dot with 1 tablespoon butter. Sprinkle with paprika. Bake at 400 deg. for 30 minutes.

Serves 6.

Variation: Omit the creamed cheese and substitute 4 ounces cottage cheese. Also, you can use dried minced onions, or sauteed onions instead of green onions for this recipe. Everything else is the same.
