Red Beans and Rice

 
I got this recipe from Ruth, an internet friend.  Thanks.

1 pound of red beans
1 tablespoon salt (optional)
1 or 2 medium sized onions, diced
1/4 stick butter
2 or 3 tablespoons brown sugar
1 pound of rope sausage (your choice), cut into bite-size slices
1 tablespoon cilantro or parsley, fresh or dried
Rice (Minute or otherwise, amount depending on amount of people you have to feed and kind you prefer.  Ruth uses Minute Rice.)
 
Rinse beans and check to make sure no rocks mixed in package.  Soak beans in water overnight.
 
Put in a pot, cover completely with water and add salt, if used.  Cook on medium heat until soft, but not mushy.  (Test after about an hour.)
 
Add diced onions after one hour, no matter how the beans are doing.  Add the brown sugar.  Cook down for another half hour.  Add sausage and cilantro about 10 minutes before serving on bed of rice.
 
Note from Ruth:  Sausage should be pre-cooked - what you are doing is heating it in the sauce.
