Stuffed Zucchini Squash

3 medium zucchini squash
Cooking spray
1 clove garlic, minced
2 tablespoons onion, chopped
1/2 cup fresh tomato, chopped
1/2 cup rice, cooked
1/4 teaspoon oregano leaves
1/4 teaspoon pepper

Preheat oven to 350 deg. Wash zucchini and trim ends. Cut in half lengthwise, and parboil in a small amount of boiling water for 5 minutes. Remove from water. Scrape out pulp and cube. Set aside squash shells.

Spray a non-stick skillet with cooking spray. Add garlic and onion and cook until tender. Mix in tomato, rice, cubed zucchini, oregano and pepper. Stuff squash shells with mixture. Place stuffed shells on a baking sheet and bake for 30 minutes.
