2 lbs. fresh green beans
3 quarts water
1/2 cup finely chopped green onions
1/3 cup olive oil
1/4 cup cider vinegar
1/4 cup chopped fresh parsley
1/4 cup chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup coarsely chopped walnuts, toasted
Wash beans; trim ends. Bring water to a boil in a Dutch oven; add beans and cook for 10 minutes or until tender. Drain and set aside.
Combine green onions and next 6 ingredients; pour over green beans and toss gently. Sprinkle with walnuts; serve hot or cold.
