2 medium cucumbers (about 1 pound), peeled, seeded, and diced fine
1/2 teaspoon salt
2 cloves garlic, finely minced
1 tablespoon snipped fresh dill OR 1 teaspoon dried dill
4 cups (1 quart) low-fat yogurt, unflavored
Salt to taste
Dill, cucumber slices, and yogurt for garnish
Mix the diced cucumbers and salt in a colander and place in the sink to drain for about 20 minutes. Mix drained cucumbers, minced garlic, dill, and yogurt in a large bowl and chill for at least one hour. Taste and add salt, if desired. If the soup is too thick, dilute with a little cold milk or water. Spoon into serving bowls, garnish, and serve.
