1/2 lb. lean ground beef 1 envelope zesty Italian salad dressing mix, divided 1/4 cup plain bread crumbs 6 cups water 4 stalks celery, chopped 1 carrot, chopped 1 can (8 oz.) stewed tomatoes 1/4 teaspoon crushed red pepper 1-1/2 cups instant brown rice Mix meat, 1 teaspoon of the salad dressing mix and bread crumbs in small bowl. Shape into 1-inch meatballs; set aside. Bring water to boil in large saucepan. Add meatballs, remaining salad dressing mix, vegetables and pepper; bring to boil. Stir in rice. Return to boil. Cover; reduce heat and simmer 5 minutes. Remove from heat and let stand 5 minutes. Makes 10 servings. |
