1 (17 oz) pkg. elbow macaroni (2 cups uncooked) 1 to 1-1/2 pounds smoked sausage, sliced and quartered 1-1/2 cups shredded cabbage 1/2 cup shredded carrots 4 green onions with tops, sliced 6 cups prepared chicken or beef broth 1 teaspoon beau monde seasoning 1/4 teaspoon coarse ground pepper 1/8 teaspoon ground nutmeg 2 to 3 drops hot sauce Prepare macaroni according to package directions; drain. In large kettle, cook smoked sausage, cabbage, carrots and green onions in broth just until vegetables are tender. Add remaining ingredients. Simmer 5 minutes. Stir in macaroni and heat through. Refrigerate leftovers. Serves 6. |
