2 cups dry black beans 3-1/2 cups water or stock 1 onion, chopped 1 carrot, diced 1 stalk celery, diced 2 cups orange juice 1/2 teaspoon ground cumin Salt & pepper to taste Plain Yogurt Sesame seeds, toasted Soak beans in water or stock for 4 hours. Cook beans 1-1/2 hours in pot with cover. Add vegetables, orange juice, cumin, salt and pepper. Simmer for at least 1-1/2 hours, until vegetables are tender. Put in serving bowls and top with yogurt and sesame seeds. |
