Carrot Cake

 
This recipe came from my sister.  Thanks, Rita.

2 cups flour
2 cups sugar
4 eggs
3 cups grated carrots
1 teaspoon vanilla
1-1/2 cups corn oil
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking powder
2 teaspoons baking soda
Frosting (recipe follows)
 
Mix all dry ingredients together.  Add oil, eggs and vanilla; blend well.  Bake in three greased and floured 9-inch pans at 350 deg. for 30 minutes or until done.  Cool.  Frost.
 
 
Frosting
 
1 cup chopped pecans
1 box (1#) powdered sugar
1 (8 oz.) pkg. cream cheese
1 stick (1/2 cup) butter or margarine, softened
1 teaspoon vanilla
 
Cream butter and cheese.  Add sugar, vanilla, and pecans.  Blend well.  Add a little milk,  if necessary, to spread.
