Coconut Cake

 
I can attest that this recipe is well over 60 years old.  Our neighbor made it when I was a child.  It's delicious.

2-1/4 cups sifted cake flour
1-1/2 cups sugar
4 teaspoon baking powder
1 teaspoon salt
1/2 cup shortening (she used Spry)
1 cup milk, divided
1 teaspoon vanilla
3/4 teaspoon orange extract (optional)
4 egg whites, unbeaten

Sift flour, sugar, baking powder, and salt into mixing bowl.  Drop in shortening; add 3/4 cup milk and flavoring; beat 200 strokes (2 minutes by hand or on mixer at low speed).  Add egg whites and 1/4 cup milk; beat additional 200 strokes.  Bake in two 9-inch greased layer pans in moderate oven (350 deg.) for 20 to 25 minutes.  Spread on Seven Minute Frosting and coconut.
