Poke Cake

1 box White cake mix
2 cups boiling water, divided
1 (4 serving size) red (any flavor) Jell-0 gelatin
1 (4 serving size) lime Jell-0 gelatin
1 (12 oz.) Cool Whip topping, thawed OR 1 (16 oz.) can vanilla frosting
 
Preheat oven to 350 deg.  Prepare, bake and cool cake mix as directed on package for two 9-inch round cake layers.  Place cake layers, top side up, in 2 clean 9-inch round cake pans.  Pierce cake with large fork at 1/2-inch intervals.
 
Stir 1 cup of the boiling water into each flavor of gelatin in separate bowls for 2 minutes, or until gelatin is dissolved.  Carefully pour red gelatin over 1 layer and lime gelatin over second cake layer.  Refrigerate for 3 hours.
 
Dip one cake pan in warm water for 10 seconds; unmold onto serving plate.  Frost with topping or icing (whichever you prefer).  Repeat with second cake pan, placing on top of first layer.  Frost sides and top.  Refrigerate until ready to serve.  Store leftover cake in refrigerator.
