Spanish Cream Cake

 
This is my great-aunt Melva's recipe.  It's wonderful!

2 cups sugar
1-1/4 cups Wesson Oil
1/2 cup margarine
5 egg yolks
5 egg whites
1 teaspoon vanilla
1 cup buttermilk
2 cups plain sifted flour
1 teaspoon soda
2 cups coconut
1 cup chopped nuts
 
Frosting
 
1/2 cup margarine
2 tablespoons coconut
1 lb. confectioners' sugar
8 oz. cream cheese
1 teaspoon vanilla
 
Beat oil, sugar, and margarine until fluffy.  Add egg yolks and vanilla.  Beat well.  Add dry ingredients; add buttermilk.  Stir in coconut and pecans.  Beat egg whites until stiff and fold into batter.  Pour into three greased and floured 9-inch bake pans.  Bake at 350 deg. for 30 minutes.  Cool.
 
Frosting
 
Beat cheese and margarine together.  Add rest of ingredients.  Frost between layers and on top.
