7 medium-sized new potatoes 3 slices bacon 1 small onion, chopped 1/2 cup water 1/2 cup vinegar 1 tablespoon sugar 2 teaspoons cornstarch 1 teaspoon salt Scrub potatoes, then cook in boiling water about 30 minutes or until tender. Drain, and chill. Peel and cut potatoes into thin slices. Cook bacon in a large skillet until done, but limp. Remove bacon, reserving drippings in skillet. Tear bacon into bite-sized pieces. Set aside. Saute onion in bacon drippings until tender. Stir in remaining ingredients; cook over medium heat until slightly thickened. Add bacon and pour over potatoes. Toss gently. Serves 6. |
