1 6-oz. pkg. strawberry flavored gelatin 1/2 teaspoon salt 2 cups hot water 1 8-1/4 ounce can crushed pineapple 2 tablespoons lemon juice Cold water 1/2 cup toasted chopped Diamond Walnuts 1/2 cup diced celery 2/3 cup chopped raw cranberries Crisp lettuce Dissolve gelatin and salt in hot water. Drain pineapple, saving syrup. Combine syrup and lemon juice with cold water to measure 1-2/3 cups liquid. Add to gelatin. Chill until mixture begins to thicken slightly. Fold in walnuts, celery, cranberries, and drained pineapple. Turn into oiled 1-1/2 quart mold and chill firm, at least 4 hours. Unmold onto crisp lettuce. Makes 8-10 servings. |
