3 medium cucumbers, sliced 1/4" thick 1 medium onion, sliced and separated into rings 3 medium tomatoes, cut into wedges or sliced 1/2 cup vinegar 1/4 cup sugar 1 cup water 2 teaspoons salt 1/4 teaspoon coarse ground black pepper 1/4 cup oil 1 teaspoon mint (optional) Combine cucumbers, onion, tomato wedges in a refrigerator bowl. Mix vinegar, sugar, water, salt, pepper, oil, and mint, if used. Pour over vegetable mixture. Refrigerate at least 2 hours. Serves 6 to 8. |
