Key Lime Pie

1 deep-dish pie crust, baked
1 pkg (3 oz.) lime flavored gelatin
1/2 cup boiling water
1 cup evaporated milk
1/2 cup sugar
2 tablespoons key lime juice
 
In small bowl, dissolve gelatin in boiling water.  Chill until very thick, but not set.
 
Pour evaporated milk iinto large bowl; place in freezer until ice crystals form around edges (about 20 minutes).  Beat on high speed of electric mixer until stiff.  Gradually beat in sugar until dissolved.  Gradually beat in gelatin and lime juice.  Pour into baked pie crust.  Refrigerate 2 hours or until set.
 
Makes 8 servings.
