For 8" pie
1/4 teaspoon salt
1/4 teaspoon extract
2 egg whites
4-6 tablespoons sugar
For 9-10" pies
1/4 teaspoon salt
1/2 teaspoon extract
3 egg whites
6-9 tablespoons sugar
Add salt and extract to egg whites and beat to a stiff foam. Add sugar a tablespoon at a time, and continue beating until mixture piles up in heavy, lustrous peaks. Spread on pie and bake in moderate oven (350 deg.) about 12 minutes, until nicely browned.
*Note: Either 2 or 3 tablespoons sugar to each egg white may be used depending on the sweetness you desire.
