Cooked Meringue

 
This recipe is also from my mom's old beat-up cookbook.

2 tablespoons water (or fruit juice)
2 egg whites
1/4 teaspoon salt
1/2 cup sugar
1/2 teaspoon unflavored gelatin
1/2 teaspoon water
1/4 teaspoon vanilla extract (see note)
 
Put water (or juice), egg whites, salt, and sugar in top of double boiler and beat to blend ingredients.  Soften gelatin in 1/2 teaspoon cold water.  Cook egg white mixture over boiling water, beating constantly, 3 to 4 minutes, or until meringue piles into glossy peaks.  Add softened gelatin and beat vigorously 1 minute.  Remove from heat and place pan in cold water; beat until cold.  Spread on pie. 
 
Covers one 9 or 10 inch pie.
 
*Note:  If water is used, add 1/4 teaspoon extract while frosting is cooling.
