Buckeyes

1 1-lb. jar peanut butter
1 1-lb. box confectioners sugar
1/2 lb. (2 sticks) butter, softened
1 12-oz. pkg chocolate chips
1/2 block paraffin

Mix peanut butter, powdered sugar and butter. This will be very soft and rather hard to handle if you try to make balls now, so put in freezer for about an hour to thicken it up. Make into balls about 1-1/2" diameter. Stick toothpick in top. Put into refrigerator for several hours.

Melt chocolate chips with paraffin in top of double boiler. Grate paraffin or cut into very small pieces. It will take longer to melt than chocolate chips, so you should partially melt it before you add chocolate chips. Dip balls partially into chocolate, leaving top uncovered so it resembles a buckeye. Set on waxed paper. Remove toothpick. When you have finished dipping, take a toothpick, dip into chocolate and cover hole left by toothpicks.

*Note: You will probably have to reheat your chocolate while dipping these balls because they will be cold from refrigerator, and it will cause the paraffin to try to harden before you are finished dipping.
