Sausage Cake


This recipe is from Arlene, another internet friend. Her tip: I add more nuts and always use chopped dates. If you have never eaten this cake, you are in for a surprise. We make about 10 every year.

1 lb. Owens country sausage, uncooked
3 cups brown sugar (firmly packed)
1 egg, beaten
3-1/4 cups sifted all-purpose flour
2 teaspoons baking soda
3 teaspoons baking powder
1 teaspoon nutmeg
2 teaspoons cinnamon
1 cup strong black coffee
2 teaspoons vanilla
1/4 teaspoon salt
1 cup pecans (or walnuts)
1/2 cup raisins or chopped dates

Mix sugar with sausage; add egg. Sift dry ingredients together and add to sausage mixture alternately with coffee. Add vanilla and beat well. Add dredged fruit and nuts. Pour into well greased tube pan. Bake in 350 deg. oven for 1-1/4 hours.
