1 cup whole-wheat flour
1/2 cup all-purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1/2 cup whole-bran cereal
1 cup cold strong coffee
1/4 cup oil
1 tablespoon vinegar
1 teaspoon vanilla
Mix well flours, sugar, baking soda, spices, and salt; set aside.
In 8 x 8 x 2" baking pan, mix well cereal and coffee; let stand 2 minutes or until most of liquid is absorbed. Stir in oil, vinegar and vanilla, then stir in flour mixture until smooth.
Bake in 350 deg. oven 40 minutes or until pick inserted in center comes out clean. Cool completely in pan on rack. Cut into 9 squares. |
