Crumb Topping: 1/3 cup firmly packed brown sugar 1 cup sifted all-purpose flour 1/2 teaspoon ground cinnamon 1/2 cup butter or margarine, softened Cake: 1-1/2 cups sifted all-purpose flour 1/2 teaspoon ground cinnamon 1/2 teaspoon salt 2-1/2 teaspoons baking powder 3/4 cup firmly packed brown sugar 1/4 cup (1/2 stick) butter or margarine, softened 1 egg 3/4 cup milk Make topping: Combine sugar, flour, cinnamon, and butter in small bowl; mix until crumbly. Reserve. Make cake: Sift flour, cinnamon, salt, and baking powder onto wax paper. Beat sugar, butter, and egg in medium size bowl until smooth. Add milk alternately with flour mixture, stirring well after each addition. Spread in greased 8x8x2" pan. Sprinkle with Crumb Topping. Bake in a moderate oven (375 deg.) for 30 minutes or until top springs back when lightly pressed with fingertip. Serve warm. |
