FRUIT COCKTAIL CAKE - FROM CAKE MIX 1 pkg Yellow Cake mix 1 - (1#) can Fruit Cocktail, undrained 3 eggs 3/4 cup brown sugar 1/2 cup chopped nuts Combine mix, fruit cocktail and eggs in large mixing bowl. Blend and beat as directed on package. Pour into greased and floured bundt pan, ring mold, tube pan or 13 x 9" pan. Combine brown sugar and nuts. Sprinkle over batter. Bake in 350 deg F. oven for 40-50 minutes or until it tests done (less time for smaller cakes). Variation: Omit brown sugar and nuts. Spread baked slightly cooled cake with a mixture of 3 oz pkg of cream cheese, 2 tablespoons light cream, 2 tablespoons sugar and 1/2 teaspoon vanilla which has been mixed together. FRUIT COCKTAIL CAKE - FROM SCRATCH 1 cup flour 1 cup sugar 1 teaspoon soda dash of salt 1 egg, beaten 1 can Fruit Cocktail, drained 3/4 cup brown sugar, packed 1/2 cup chopped nuts Heat oven to 350 deg F. Mix flour, sugar, soda, salt and egg. Add fruit and blend well. Turn into ungreased 8" square pan. In small bowl, mix brown sugar and nuts. Sprinkle on top of fruit mixture in pan. Bake 50 minutes. Serve warm with whipped cream. 6 to 8 servings. |
