Pork Fried Rice


I got this recipe from my sister-in-law several years ago. Sooo good! Thanks, Naty.

2 lb. pork with fat on
2 cloves garlic, chopped
1 small onion, diced
1 cup celery, diced
1 cup carrots, diced
1 cup green pepper, diced
4 cups uncooked rice, cooked
Soy Sauce
2 eggs

Cook rice; set aside.

Trim fat from pork and fry fat in skillet. Discard fat, keep the grease. A small amount of oil may be added if needed. Put garlic and onion in skillet; saute just until tender. Push out to sides and leave in skillet. Add celery, carrots and green peppers; stir fry. Mix all vegetables together. Push to sides. Beat eggs, then fry in skillet. Break up and blend in with vegetables.

Add rice to mixture. Sprinkle with soy sauce and mix well. Heat through. Serve hot!
