Sloppy Joes


This is a heart-healthy recipe published by the American Heart Association, sent by my sister. Thanks, Rita.

1 8-oz. can no-salt-added tomato sauce
1/2 cup ketchup
1-1/2 tablespoons Worcestershire sauce
1 teaspoon prepared yellow mustard
1/2 teaspoon dry mustard
1 teaspoon molasses
1 clove garlic, finely minced
1/4 teaspoon freshly grated orange peel
Pinch ground cloves
Hot pepper sauce to taste
1 pound very lean ground sirloin
1/2 small onion, finely chopped
6 whole-wheat hamburger buns (toast if desired)

In a saucepan over low heat, combine first ten ingredients. Mix well and simmer while preparing meat.

Heat a heavy, non-stick skillet at least 10-inches in diameter, over medium-high heat. Add ground beef and saute, stirring occasionally, 4 to 5 minutes, or until meat is no longer pink. Pour contents of pan into a strainer or colander lined with paper towels. Allow fat to drain out.

Add onion to pan and saute, stirring frequently, about 5 minutes, or until translucent. Return meat to pan and add sauce. Heat 3 minutes, stirring occasionally. Add additional hot pepper sauce, if desired. Spoon half cup mixture over each bun. Serve immediately.

Makes 8 servings.

*Note: This is a low-fat, low-sodium, and low-calorie version of Sloppy Joes. The sauce and meat mixture freezes well.
