Potato Frittata w/Ham and Cheese

1/4 cup vegetable oil
3 cups frozen hash-brown potatoes
1 medium zucchini, cut into thin 1-inch strips
1/2 cup slivered red pepper
1/4 cup chopped green onion
1 cup cooked ham, chopped
3 eggs
1 tablespoon water
1/2 teaspoon dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded mozzarella cheese

In large oven-proof skillet, heat oil over medium-high heat. Add potatoes; cover and cook 5 minutes. Stir in zucchini, red pepper, and onion. Stirring frequently, cook 5 minutes. Stir in ham. Preheat oven to broil. In bowl, stir together eggs, water, basil, salt, and pepper until smooth. Pour over vegetable mixture in skillet. Reduce heat to low; cook 3 minutes or until eggs are almost set. Sprinkle with cheese. Place in broiler and broil 3 to 5 minutes, or until cheese is melted and golden.
