1 (10 oz.) can enchilada sauce 1 (4.5 oz.) can chopped green chiles 2 lbs. ground beef 1 small onion, chopped 1 can cream of mushroom soup 1 can cream of chicken soup 1 pkg. taco seasoning 1 pkg (10 count) 10" soft flour tortillas, cut into quarters 2 cups shredded cheddar cheese 1 cup shredded mozzarella cheese In skillet, brown ground beef. Add onion to beef to saute. Drain. Add enchilada sauce, chiles, soups, and taco seasoning. Simmer for 15 minutes. Spray a 9 x 113 casserole dish with non-stick spray. Layer bottom of dish with 1/3 of tortillas. Spread 1/3 of meat mixture on tortillas and top with 1/3 of cheese. Repeat this order twice more, ending with cheese on top. Bake for 30 minutes at 350 deg. or until cheese melts. Let cool on counter for 10 minutes and serve. |
