1 tablespoon sugar
2 tablespoons white vinegar
2 tablespoons water
1/2 teaspoon salt
1/8 teaspoon pepper
2 slices bacon
1/4 cup chopped onion
1/2 medium cabbage, shredded (about 4-1/2 cups)
1 Red Delicious apple, cored and finely chopped
Combine first 5 ingredients; set vinegar mixture aside.
Cook bacon in a large skillet until crisp; remove bacon, and drain on paper towels, reservings drippings in skillet. Crumble bacon; set aside.
Cook onion in reserved drippings over medium heat, stirring constantly, until tender. Stir in vinegar mixture; bring to a boil. Add cabbage and apple, tossing gently to coat. Cover and cook 5 minutes or until cabbage is wilted. Sprinkle with bacon. Serve immediately.
Yield: 4 servings.
