3 cups cooked, diced sweet potatoes (about 2 lbs.)
1-1/2 cups diced celery
1 teaspoon salt
3 tablespoons French dressing OR mayonnaise (See note)
Crisp lettuce
Combine sweet potatoes, celery, and salt. Add dressing and toss together lightly until all the potato is coated. Serve in lettuce cups.
*Note: If mayonnaise is used, marinate the potatoes and celery half an hour in French dressing in a covered bowl in the refrigerator, then drain and add mayonnaise.
