Wilted Lettuce

1 lb. leaf lettuce OR 1 head lettuce
1 bunch radishes (optional)
1 bunch green onions
2 tablespoons bacon fat
1/2 teaspoon salt
1 teaspoon sugar
1 tablespoon vinegar
 
Separate lettuce leaves and wash thoroughly; drain well, then lay in a folded towel and shake off as much water as possible.  Tear leaves into 3 or 4 pieces.   Put into a salad bowl.  Wash radishes and slice over lettuce, if used.  Wash and trim green onions and slice over lettuce.  Heat bacon fat with salt, sugar, and vinegar until mixture sizzles.  Pour over lettuce mixture; toss together until thoroughly combined.  Serve immediately while warm.
