2 cups cleaned, cooked shrimp, chilled
1/2 cup sliced celery, chilled
1 teaspoon minced onion
1/3 cup mayonnaise
1/4 cup chili sauce
3 tablespoons lemon juice
2 or 3 hard-cooked eggs, chilled
Crisp lettuce
Combine first 6 ingredients. Slice eggs and arrange in a ring on lettuce-lined individual salad plates. Pile salad mixture in the center of the ring.
Makes 5 servings.
