1-1/4 cups boiling water
1 cup oats
1 stick butter
1 cup granulated sugar
1 cup packed light brown sugar
2 eggs, well beaten
1 teaspoon vanilla
1-1/3 cups flour, sifted
1 teaspoon soda
1 teaspoon cinnamon
1/2 teaspoon salt
Icing (recipe follows)
Pour boiling water over oats and let stand 20 minutes. Add butter and sugars to oat mixture; mix well. Add eggs and vanilla; mix well. Sift together flour, soda, cinnamon and salt. Add to mixture; mix well.
Bake in a 10 x 10-inch pan at 350 deg. for 35 minutes. Pour on icing immediately and broil.
Icing
1 cup light brown sugar
4 tablespoons butter
1 can angel flaked coconut
1/2 cup cream (or evaporated milk)
Mix together. Spread on top of cake as soon as you take it from the oven. Put under broiler until brown.
