Peanut Butter Sheet Cake

 
This recipe came from Virginia, an internet friend.  She got it from her daughter, Peggy, in Ohio.  I made this and it's delicious, very moist.

In a saucepan mix:
1/4 cup peanut butter
1 cup water
1/2 cup margarine
 
Stir and bring to a boil.  Remove from heat.
 
Add:
1 cup white sugar
1 cup brown sugar
2 cups all-purpose flour  which has been sifted with
1 teaspoon salt
1 teaspoon baking soda
 
Mix well.  Add to mixture:
2 eggs, slightly beaten
1/2 cup buttermilk (or milk with lemon juice)
1 teaspoon vanilla
 
Stir well and pour into a greased sheet cake pan.  Bake at 375 deg. F:
9 x 13 - Bake 25 minutes or until tests done
10 x 16 - Bake 15 minutes or until tests done
 
 
Frosting
 
Mix in a sauce pan and bring to boil:
6 tablespoons buttermilk
3/4 cup margarine
1/2 cup peanut butter
 
Remove from heat and add:
3-1/2 cups sifted confectioners' sugar
1 teaspoon vanilla
 
Stir quick and pour over warm cake.
