2 cups sweet potatoes, liquid reserved
3 cups sugar
1 teaspoon walnut extract (optional)
1 cup cooking oil
1 teaspoon vanilla
4 eggs, separated
2/3 cup sweet potato liquid
2 teaspoons soda
3-1/2 cups flour
1 teaspoon salt
1-1/2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves
1 cup dates or raisins
1 cup chopped pecans
1 cup chopped walnuts
Mash potatoes and combine with sugar, flavorings, and oil. Beat in egg yolks and 2/3 cup sweet potato liquid. Mix in nuts. Sift all dry ingredients together; add to sweet potato batter. Fold in stiffly beaten egg whites. Bake in 2 tube pans or 4 (1 pound) coffee cans which have been greased and floured for 1 hour at 350 deg.
