1 cup butter
2 cups sugar
2 cups applesauce
1 cup broken pecans or walnuts
1 cup raisins
3 cups all-purpose flour
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla
1-3/4 teaspoons soda
Cream sugar and butter until light and fluffy; add applesauce and raisins and nuts which have been dredged in 1/4 cup of the measured flour.
Sift all dry ingredients together and add to the mixture. Pour into loaf or tube pan and bake 2 hours in a slow oven at 325 deg. Ice with caramel icing. Cake keeps indefinitely and gets better all the time.
