1 level cup cake flour
3/4 teaspoon salt
1-1/2 cups sugar
1-1/4 cups egg whites
1/4 teaspoon salt
1 level teaspoon cream of tartar
1 teaspoon vanilla (also good with lemon or almond)
Sift cake flour, 3/4 teaspoon salt and sugar together 5 times. Beat egg whites to froth with 1/4 teaspoon salt. Beat until stiff. Add sugar gradually. Stir in vanilla. Fold in flour. Do NOT beat!
Pour batter into tube pan which has been rinsed with cold water. Bake 45 to 60 minutes at 400 deg. Decrease heat to 350 deg. Put a pan of hot water under cake while finishing baking.
