Roast Pork w/Sweet Potatoes

3 to 4 lb. boneless pork sirloin roast
1 tablespoon lemon-pepper seasoning
1 tablespoon all-purpose flour
1/3 cup honey
1/4 cup lemon juice
1 tablespoon brown sugar
6 sweet potatoes, peeled and halved
3 apples, cored and quartered
2 oranges, thin sliced

Sprinkle roast with seasoning. Sprinkle flour over top and bottom of roast. Put in shallow pan; cover tightly with foil, and roast for 1-1/2 hours at 325 deg.

Combine honey, lemon juice and brown sugar. Remove foil from pan. Put sweet potatoes around roast. Spoon honey mixture over roast and potatoes. Sprinkle with nutmeg, if desired.

Roast for 1 to 1-1/4 hours or until tender. Put apple quarters on top of sweet potatoes. Brush with honey mixture. Roast for 15 to 20 more minutes. Garnish with orange slices before serving.

Serves 4 to 6.

*Note: Roast pork should have internal temperature of 170 deg. using a meat thermometer.
