Roast Pork w/Fruit Sauce

3 to 4 lb. pork loin roast
1 cup apple juice
1/2 cup apple jelly
1 teaspoon ground cardamon
3/4 cup dried fruit (cranberry, cherries, apricots, or peaches)

Place roast in shallow roasting pan. In a small saucepan, combine juice, jelly, and cardamon. Heat mixture until smooth, stirring frequently; pour over roast. Bake in 375 deg. oven for 1 to 1-1/4 hours, or until meat thermometer registers 170 deg., basting every 30 minutes with jelly mixture. Remove roast to cutting board; cover loosely with aluminum foil. Remove fat from pan juices. Transfer pan juices to a small saucepan; add cranberries (or other fruit). Simmer 5 minutes or just until fruit is softened. Slice roast and serve with fruit sauce.

Makes 6 to 8 servings.

*Note: Roast pork should have internal temperature of 170 deg. using a meat thermometer.
