Mock Apple Pie

 
Virginia sent me this recipe.  It used to be on Ritz Cracker boxes, but not anymore.  My mom used to make this pie years ago.  Thanks, Virginia.

Pastry for two-crust 9-inch pie
 
36 Ritz Crackers
2 cups water
2 cups sugar
2 teaspoons cream of tartar
2 tablespoons lemon juice
Grated rind of one lemon
Butter or margarine
Cinnamon
 
Fit bottom crust into a 9-inch pie pan.  Break crackers coarsely into pastry lined pan.  Combine water, sugar, and cream of tartar in sauce pan; boil gently for 15 minutes.  Add lemon juice and rind.  Cool.  Pour syrup over crackers, dot generously with butter or margarine and sprinkle with cinnamon.  Cover with top crust and trim and flute edge.  Cut slits in top to let steam out.  Bake in hot oven (425 deg.) 30-35 minutes, until crust is crisp and golden.  Serve warm.
 
*Note:  I agree with Virginia.  It sure does taste like apple pie.
