3/4 cup rice, uncooked 3 cups water 1/2 teaspoon salt 1 can (15 oz.) condensed milk 1/2 cup butter 1 tablespoon vanilla Measure rice, water, and salt into a medium saucepan. Bring to a boil; reduce heat to simmer and cook uncovered for 20 minutes. Place rice in top of a double boiler; stir in condensed milk and butter. Cook in double boiler until mixture has thickened, about 20 minutes. Remove from heat and stir in vanilla. Use parfait glasses for serving, alternating layers of rice with cherry, blueberry, peach, or apricot pie filling. Top with whipped cream. Yield: 6 servings. |
