Cream Cheese Squares

This is very rich. When serving, let it sit for about 10 minutes to get full flavor. This recipe came from Helen, a visitor to the site. Thank you, Helen.

Base

1/3 cup butter, softened or melted
1/3 cup sugar
1 cup flour
1/2 cup chopped walnuts (finely chopped

Mix above ingredients for crust (reserve 1 cup for topping).
Press rest of the mixture into an 8 x 8" pan, pressing onto sides of pan, but not all the way up. Bake in 350 deg. preheated oven 10 to 12 minutes.

Filling

1/4 cup sugar
8 ounces cream cheese
1 egg
2 tablespoons milk
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract

Mix well; spread over crust; put reserved topping over top, spreading evenly. Bake for 25 minutes in 350 deg. oven.

When cool, cut into squares. Refrigerate.

*Note: Helen says you can also double the recipe and it goes a long way. To double recipe, use 9 x 13" pan.
