This recipe was published on a box of Minute Rice.

1 lb. boneless skinless chicken breasts, cut into strips
1 medium onion, sliced
1 medium green pepper, cut into thin strips
1 tablespoon oil
1 can (8 oz.) stewed tomatoes
1 can (8 oz.) tomato sauce
1 teaspoon garlic powder
1/4 teaspoon dried oregano leaves
1/4 teaspoon salt
1/4 teaspoon pepper
Minute Rice
 
Cook and stir chicken, onion, and green pepper in hot oil in large skillet until lightly browned.  Add tomatoes, tomato sauce, garlic powder, oregano, salt, and pepper.  Bring to boil  Reduce heat and simmer 5 minutes.
 
Meanwhile, prepare 4 servings rice as directed on package, omitting margarine and salt.  Serve chicken and vegetables over rice.
 
Makes 4 servings.
