1/4 pound sausage
1 cup diced celery
1 cup chopped mushrooms
1 small onion, chopped
1-1/2 cups beef broth
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/8 teaspoon pepper
1-1/2 uncooked Minute rice
Brown sausage in saucepan or skillet. Add celery, mushrooms, and onion; cook 3 minutes. Add broth and seasonings. Bring to a boil. Stir in rice; cover. Remove from heat. Let stand 5 minutes. Spoon stuffing into poultry. Do not pack tightly. Roast at once, as directed on poultry wrapper.
Casserole method: Prepare stuffing as directed; place in a greased 13 x 9-inch baking pan. Top with chicken parts. Bake at 350 deg. for 45 minutes, or until chicken is tender.
Makes 5 cups stuffing (enough for 4-1/2 to 5 pound dressed roasting chicken).
