Spiced Oatmeal Raisin Cookies


This a Pioneer Biscuit & Baking Mix recipe.

2 cups Pioneer (Original or Buttermilk) Biscuit & Baking Mix
2 cups oats, uncooked
1 teaspoon dried orange peel granules or grated fresh orange peel
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon salt
1 cup granulated sugar
1 cup packed brown sugar
1/2 cup margarine, or butter
2 large eggs
1 tablespoon water
1 teaspoon vanilla extract
1 cup raisins

Preheat oven to 350 deg. Lightly oil cookie sheet.

Combine biscuit mix, oats, orange peel, cinnamon, allspice, and salt in bowl with whisk.

In separate bowl, beat granulated sugar, brown sugar, and margarine with electric mixer until well blended. Add eggs, water and vanilla; beat until creamy. Add dry ingredients to sugar mixture; beat until ingredients are well combined. Stir in raisins.

Drop by heaping tablespoons 2 inches apart on prepared cookie sheet. Bake 14 to 16 minutes or until set. Let stand 1 minutes before removing to racks to cool.

Yield: 5 dozen cookies.
