Cottage Cheese Cookies


These are soft, cake-like cookies.

1 cup whole-wheat flour
1/4 cup unprocessed bran
1/4 cup nonfat dry milk
1/4 cup toasted wheat germ
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 cup butter or margarine, softened
1/2 cup creamed cottage cheese
1/2 cup sugar
1/4 cup honey
1 egg
1 teaspoon vanilla

Mix flour, bran, dry milk, wheat germ, baking powder, spices and salt; set aside. In large bowl of mixer, beat butter and cheese until smooth and well blended. Add sugar and honey; beat until fluffy. Add egg and vanilla; beat well. Gradually stir in flour mixture until well blended. Drop by rounded teaspoonfuls about 2 inches apart on greased cookie sheets. Bake in preheated 350 deg. oven 8 to 10 minutes or until golden around edges. Remove to racks to cool.

Makes about 30 cookies.
