2/3 cup unsalted butter, softened
3/4 cup sugar
1 egg
1/2 cup plus 1 tablespoon orange juice
2 cups flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 cups confectioners' sugar, sifted
2 egg whites
Heat oven to 400 deg. Cream together butter and sugar in an electric mixer bowl. Add egg and beat until combined. Stir in 1/2 cup orange juice. Sift together flour, baking powder, baking soda, and salt; add to egg mixture and mix until just combined.
Drop rounded teaspoonfuls of dough about 2 inches apart on two parchment-lined baking sheets. Bake about 8 to 10 minutes, or until browned on edges. Remove from oven.
Meanwhile, combine comfectioners' sugar, egg whites and 1 tablespoon orange juice in a bowl and beat until fluffy and shiny. Spread iciing over cookies. Let stand until dry (about 4 hours).
Makes about 28 cookies.
*Note: You can make lemon flavored snowballs by substituting 1/2 cup plus 1 tablespoon lemonade.
