Meatloaf

1 to 1-1/2 lbs. hamburger or ground chuck
1/4 cup chopped onion
1/4 cup chopped green pepper
1/2 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
1 or 2 eggs, depending on how much meat used
1/4 teaspoon ground thyme
1/4 teaspoon onion salt
1/4 teaspoon garlic salt
1/4 cup ketchup
1/2 cup quick oats
1 tablespoon mustard
2 tablespoons sweet pickle relish
1/3 cup milk

Mix all ingredients until well blended. (I mix with my hands, kneading somewhat like kneading bread and squeezing ingredients through.)  Put in 8 x 4 microwavable dish, forming loaf. Cover top of meatloaf with additional ketchup or tomato sauce (either one works).

Preheat micro-convection to 400 deg. Cook, uncovered, at 400 deg. for 20 to 25 minutes in micro-convection oven.

*Note: There won't be a lot of time difference in regular microwave if you don't have the micro-convection type. Cooking in a regular oven will take about 1-1/4 hours at 350 deg.
