Hawaiian Supper

My sister sent this Minute Rice recipe to me.  Thanks, Rita.

1 (15-1/4 oz.) can chunk pineapple in juice
1 tablespoon vinegar
2 tablespoons brown sugar
1 tablespoon cornstarch
1/2 teaspoon salt
2 tablespoons margarine or butter
1/2 pound thin strips cooked ham
1/2 pound thin strips uncooked chicken
1 medium green pepper, cut into strips
2 tablespoons sliced scallions (optional)
1/4 teaspoon garlic powder
1-1/2 cups uncooked Original Minute Rice

Drain pineapple juice into measuring cup; add water to juice to make 1-1/2 cups liquid.  Stir liquid, vinegar, brown sugar, cornstarch, and salt in a bowl.

Heat margarine in a large skillet.  Cook and stir ham, chicken, green pepper, scallions, and garlic powder until chicken is lightly browned.  Stir juice mixture to blend; pour into skillet.  Bring to a boil.  Stir in pineapple and rice; cover.  Remove from heat.  Let stand 5 minutes.  Fluff with fork.
