1 pkg. instant scalloped potatoes
2-1/4 cups boiling water
3/4 cup milk
1-1/2 cups chopped, cooked chicken
1/3 cup shredded Monterey Jack cheese
1/3 cup shredded Cheddar cheese
1/3 cup thick salsa
Heat oven to 400 deg. Mix potatoes, sauce mix (from package) and water in ungreased 2-quart round casserole. Stir in remaining ingredients. Bake uncovered 40 to 45 minutes or until potatoes are tender. Let stand a few minutes.
Makes 5 servings.
Micro Instructions
Mix as instructed above. Microwave uncovered on HIGH 33 to 36 minutes, or until potatoes are tender. Let stand uncovered 5 minutes before serving.
