Fajita Rice

 
My sister sent me this recipe.  Thanks, Rita.  This is a Minute Rice recipe.

1/2 lb. flank steak, cut into thin strips (See Note)
1 medium onion, sliced
1 medium green pepper, sliced
1 medium red pepper, sliced
1-1/2 to 2 teaspoons garlic powder
1 tablespoon oil
1/2 cup water
1/4 cup lime juice
1 to 2 teaspoons hot pepper sauce
1/4 teaspoon black pepper
1-1/2 cups Original Minute Rice
 
Cook and stir meat, onion, green and red peppers, and garlic powder in hot oil in a large skillet until browned.  Add water, lime juice, hot sauce, and black pepper.  Bring to a boil; reduce heat and simmer 5 minutes.
 
Meanwhile prepare rice as directed on package.  Serve meat mixture over hot cooked rice.
 
Yields 4 servings.
 
*Note:  1/4 lb. boneless skinless chicken breasts cut into thin strips can be substituted for the flank steak.
